Before I got into healthy eating and started to experiment, I used to eat porridge plain, maybe with a bit of sugar on the top…little did I know all I was missing out on! Now I can’t get enough of experimenting with different fruits, nut butters and superfood powders….I have discovered a whole new world of porridge! This recipe is one of my favourites. The cashew butter adds a deliciously creamy texture while the maca powder gives a great energy boost. Mixed together with the banana and lucuma powder, this creates a toffee-like flavour with just the right amount of sweetness. I like to serve my porridge with lots of fresh berries and flaked almonds.
- 1 ripe banana
- 1/3 cup of oats
- 1 heaped tsp cashew butter
- 1 tbsp chia seeds
- 1 cup almond milk (or any non-dairy milk; oat, hazelnut)
- 1 tsp maca powder (optional)
- 1 tsp lucuma powder (optional)
- I tsp date syrup / maple syrup (optional for extra sweetness if needed)
Mash the banana in a saucepan. Add the oats and almond milk and simmer for a few minutes. Half way through cooking, add the cashew butter and chia seeds and cook until all of the milk is absorbed. Just before the porridge has finished cooking stir in the maca, lucuma and date syrup if you’re adding these.
