I have been making banana “nice-cream” from sliced frozen bananas for a couple of years now. I absolutely love how you can achieve the ice-cream type affect from one simple ingredient; the banana! Its incredible.
Recently, I started to experiment with adding other ingredients. When I came up with this recipe, my mind was blown. The combination of the maca and lucuma powder together with the sweetness from the ripe banana, creates the most delicious toffee-caramel taste. It feels so indulgent – amazing considering the only ingredients are banana, super-food powders and a little almond milk. I’m addicted – its my ultimate evening treat, and since its only full of goodness, its completely guilt free.
- 2 large over ripe sliced frozen bananas
- 1 tsp heaped maca powder
- 1 tsp heaped lucuma powder
- 2 tbsp almond milk (any other non-dairy milk)
Slice 2 over ripe bananas and freeze overnight or at least for 6 hours.
Take the bananas out of the freezer and leave to stand for a few minutes before adding them to the food processor with the almond milk. Mix together for a couple of minutes. When you’re starting to see a whippy like ice-cream texture add the maca and lucuma just before the end. Once its all mixed together, serve straight away and enjoy. I like to sprinkle mine with cinnamon and chopped nuts.
