If you love traditional Bakewell Tart and you’ve been missing out since being healthy, these sweet treats are going to be your saviour! Made with only plant-based good stuff, they tick all the Bakewell flavour boxes without any of the gluttonous pastry and refined sugar. Energy balls have been my go-to snack for a while now. I love finding new flavours and combinations. I especially like these energy balls because they truly show how you don’t have to miss out on your favourite tastes in order to be healthy!
INGREDIENTS
(makes 15-20 balls)
- 1/3 cup oats
- 1/3 cup almonds
- 1/3 cup cashews
- 1 tbsp natural almond extract
- 1 cup medjool dates
- 2 & 1/2 tbsp. almond butter
- 1 tbsp coconut oil
- 2 heaped tbsp goji berries (optional)
METHOD
Start by putting the almonds, cashews and oats in a food processor and blend for a few of minutes, until a flour starts to form. Then add the almond butter, coconut oil and almond extract blending for a few seconds before slowly adding the dates. Once this is all combined in a sticky mixture, add the optional goji berries and blend for about 20-30 seconds so not completely broken up, but still in small chunks.
Divide the mixture and roll it into small balls. Put them into the fridge to to firm up for an hour or enjoy from a spoon straight out of the food processor!
