Energy balls have got to be one of the easiest and tastiest snacks when you’re on the go. I’m always looking for new combinations and since I’m such a huge fan of matcha green tea lattes, I thought this would be a great snack ingredient. This superfood powder is not only high in anti-oxidants, it also boosts memory, concentration and energy levels whilst supporting a healthy immune system. Not to mention, it tastes yummy!
(makes 15-20 balls)
- 1/3 cup cashews
- 1/3 cup almonds
- 1/3 cup pistachios
- 1 cup medjool dates
- 2 tbsp almond butter
- 1 tbsp matcha green tea powder
- 2 tbsp coconut oil
- 2 tbsp maple syrup (always the premium quality pure Canadian kind)
- 1/4 cup pistachios
Begin by putting the 1/3 cup of pistachios, almonds and cashews into a food processor and blend for a few minutes until you have a flour consistency. Then add the almond butter, matcha green tea powder, coconut oil and maple syrup blending for a few seconds before slowly adding the dates. Once this has all combined into a sticky mixture transfer it into a separate bowl.
Next take the 1/4 cup of pistachios for the coating and blend in the food processor until you have a fine crumble consistency.
Divide the sticky mixture and roll it into small balls and then coat the outside with the pistachio crumble. Put the energy balls into the fridge to firm up for a hour or so before enjoying.
