This smoothie bowl is perhaps bordering on the dessert/breakfast side – I have been known to eat it at all times of the day! I wake up ravenous at the moment (thanks to the little person growing inside me) and this hits the spot straight away in the mornings. Eating avocado is a great way to start the day as it provides all 18 essential amino acids necessary for the body to form a complete protein. This combined with the potassium from the banana and the fibre-rich antioxidant properties of cacao, and I’m all set up for the morning. I particularly love the addition of the fresh mint leaves which are amazing for food absorption and very soothing for inflammation which causes digestion issues.
TOP TIP – Make extra and save the rest in the fridge for dessert later in the day!
INGREDIENTS
(serves 1)
- 1 small avocado
- 1 small ripe frozen banana
- 1 small handful fresh mint leaves
- 2 tsps cacao powder
- 1 tsp almond butter
- 1 tsp coconut oil
- 3/4 cup almond milk (any other non-dairy milk; brown rice, oat)
- 1 medjool date (optional for extra sweetness)
- 1 heaped tsp cacao nibs
METHOD
Start by slicing a ripe banana (the riper the better) and freeze for at least 6 hours or overnight.
To make the smoothie bowl, simply blend all of the ingredients (apart from the cacao nibs) in a high speed blender. I like to use the nutri bullet. Once you have a smooth consistency, transfer the smoothie mixture to a bowl and decorate with the cacao nibs.
