MY NEW FAVOURITE SUPERFOOD: LUCUMA POWDER
I recently discovered this superfood when I was out for dinner and tried lucuma icecream. I’d seen a few recipes containing lucuma powder, and thought ‘ooh they look nice’ but never ended up experimenting. Every time I went to the shop, I thought ‘woowh that’s a bit pricey. Maybe I’ll have a re-think.’
This all changed the night I was out for dinner. The flavour was just so caramelly and toffee-like. I was inspired and instantly started to dream of healthy recipe ideas. I’ve always had a big sweet tooth so discovering naturally sweet plant based ingredients like this is always a revelation.
Traditionally known as “Gold of the Incas”, the powder is made from the cherished Peruvian lucuma fruit by drying it at low temperatures. As a low-glycemic sweetener its super healthy containing many nutrients including beta-carotene, iron, zinc, vitamin B3, calcium and protein. Lucuma powder is gluten free and a great source of anti-oxidents to support the immune system.
Even though it’s a little on the expensive side, believe me, its totally worth it. You only need a teaspoon to transform a recipe giving it an amazing maple-like sweetness. Thankfully, a bag lasts a long time. So far, I have been adding mine to Fit Food Cakes , banoffee “nicecream” and “salted caramel” balls. I can’t wait to try it with more recipes!
