If you’re a fan of pistachios and you like traditional “bakewell” taste, you’re going to love this dessert. It is definitely one of my favourites! In my not so healthy days I was really into sweets with this type of flavouring. I’d kind of forgotten how amazing this flavour is, until I recently thought about experimenting with a healthy alternative recipe. The first time I made the mousse, I literally couldn’t stop eating it with a spoon from the food processor. Its amazingly creamy thanks to the avocado and the flavours mix together perfectly! I can’t wait to make this dessert for dinner the next time I have friends over.
- 1/2 cup pistachios
- 1 avocado
- 5 medjool dates
- 1/2 tsp vanilla essence
- 1/2 tsp natural almond extract
- 2 tbsp almond or oat milk
- 1 tsp maple syrup
- 1 tsp lucuma powder (optional – if you don’t have this, add an additional tsp of maple syrup)
Start by putting the pistachios in a food processor and blend them for a few minutes until you have a fine crumble consistency. Then add the dates for another couple of minutes. Once combined, add remaining ingredients and blend until you have a creamy mousse texture. Leave for an hour to set in the fridge and serve with chopped nuts.
