This recipe has to be one of my most decadent. These shortbread bites are so rich and delicious you’d never guess they’re refined sugar free. The date caramel layer oozes between layers of shortbread nuttiness and smooth chocolate and no baking is required, so it’s really quick and easy to make. With walnuts rich in omega 3 fatty acids and plenty of cacao powder, the most anti-oxidant rich food in the world, you get that much-needed sweet fix with a healthy dose of nutrients. I really can’t quite put into words how good this recipe is, so I suggest you just try it to see what all of the fuss is about 🙂
INGREDIENTS
(Makes 12-14)
Shortbread layer
- 1/3 cup walnuts
- 1/3 cup pecans
- 1/2 cup oats
- 1/3 cup ground almonds
- 1 cup medjool dates
Caramel layer
- 1 cup medjool dates
- 3 & 1/2 tbsp cashew butter
- 4 tbsp almond milk (or any other non-dairy milk)
- 1 tbsp coconut oil
- 1 tsp natural vanilla extract
- 1 tbsp lucuma powder (optional)
Chocolate layer
- 3/4 cup cacao butter
- 4 tbsp cacao powder
- 4 tbsp date syrup
METHOD
To make the shortbread crust, simply whizz the oats, walnuts and pecans in a food processor until you have a flour consistency. Then add the ground almonds and dates and blend until they’re completely combined. Spoon the mixture into a lined baking tray or mould, and press it down so that it is all spread evenly. Put it in the fridge to set while you make the other layers.
To make the caramel layer, put all the ingredients into a food processor and blend until the dates are combined and you have a thick, gooey and smooth mixture. Pour this over the shortbread layer, smoothing it out with a spoon to make it even. Once this is done, put it in the freezer so that the caramel layer sets a little before you pour on the chocolate.
In a saucepan, melt the cacao butter on a low to medium heat until it turns into a clear yellow liquid. Then stir in the cacao powder and date syrup until it’s totally smooth. Pour the chocolate over the caramel layer and place the shortbread in the fridge for at least 30 minutes to allow the chocolate to set. Cut into slices and enjoy!
