When I started to eat more healthily, energy balls were a life-saver when those biscuit/cake cravings set in, often during the afternoon at work. I am a huge fan of sweet and salty flavours combined. I had the idea for this recipe when I discovered the caramel like taste of super-food lucuma powder – my new favourite ingredient. These balls are such a delicious treat and the best thing is they contain only nutritious, nourishing plant based ingredients. And unlike biscuits, after eating one or two (or maybe three) your snack craving is satisfied.
INGREDIENTS (makes 15-20 balls)
- 1 cup medjool dates
- 1/2 cup almonds
- 1/2 cup cashews
- 2 & 1/2 tbsp. almond butter
- 1 tsp lucuma powder (you can use maple syrup if you don’t have lucuma)
- 2 tbsp coconut oil
- 4 pinches Himalayan pink salt
Start by putting the almonds and cashews in a food processor and blend for a few of minutes, until a flour starts to form. Then add the salt, almond butter, coconut oil and lucuma blending for a few seconds before slowly adding the dates.
Continue to blend until everything has been combined together to form a sticky mixture. Divide the mixture and roll it into small balls. You can cover them in ground almonds (if you have them) or leave them as they are. Put them into the fridge to to firm up for an hour or enjoy from a spoon straight out of the food processor!
