When I started to avoid dairy and processed food, I really missed yoghurt and for a while I was living off avocado cacao mousse as an afternoon sweet treat. I had the idea for the recipe when I was making sweet potato brownies one day. I absolutely love this date and sweet potato cream smothered on my date and pecan banana loaf or on top of pancakes, or topped with berries, nuts and chia seeds as a breakfast dish. Sweet potato has traditionally been considered as a savoury meal ingredient but it’s truly amazing as a sweet dish. Since sweet potatoes contain slow releasing carbs, they are perfect for breakfast especially after a workout.
INGREGIENTS (serves 2)
- 1 medium sweet potato
- 4 medjool dates
- 1 & 1/2 tbsp. coconut cream
Chop up the sweet potato into small chunks and steam for about 20 minutes or until they become soft. Pit the dates and add all of the ingredients to a food processor and blend until you have a smooth consistency. Allow to set in the fridge for about 45 minutes and serve with all of your favourite sweet treat dishes.
