This is the most deliciously decadent nut butter I’ve ever tasted. I was never really into nut butters before I started to eat healthily. I’d never been keen on peanut butter and I was unaware of the existence of almond and cashew butters. Once I made this discovery my mind was blown. This recipe tastes unbelievable on date and pecan banana loaf for breakfast. I even love just dipping berries into the butter as an afternoon snack when I need a sweet fix to get me through the day. Its also great on top of my banoffee “nice-cream.” The list is endless.
INGREDIENTS (2-3 servings)
- 2 tbsp cashew butter
- 2 tbsp almond butter
- 1 tbsp coconut oil
- 1 tsp coconut sugar (if you don’t have this, you can use pure Canadian maple syrup)
- 1 tsp vanilla essence
- 1 vanilla pod
Scoop the seeds out from inside the vanilla pod and mix them together with all of the other ingredients in a bowl. Keep stirring until you have a delicious runny consistency. You can serve immediately if you like your nut butter runny or leave to set in the fridge if you prefer a thicker texture.
